Ingredients:
  • 450g (1lb) Lean beef mince
  • ½ Stick of celery, finely diced
  • 1 Carrot, finely diced
  • 100g (4oz) Canned or frozen sweetcorn
  • 425g Can of reduced salt baked beans
Method:
Dry fry the minced beef with the celery and carrot until the meat is browned and the vegetables are soft.

Add the sweetcorn and baked beans and simmer for 5-10 minutes.

Cook the potatoes in a microwave oven for approximately 10 minutes (microwave times will vary).

When cooked, carefully cut open the potatoes and serve with the mince mixture piled on top.

Serving Suggestions:
This recipe can be prepared as a family meal and some of the mince filling puréed or mashed with a little of the cooked potato flesh as a weaning meal.

Alternatively the puréed mince and vegetables could be frozen in small portions for future use.
