Ham and Courgette Mini Pizza Tarts

Ingredients:
  • 150g (5oz) Cooked ham, chunky off cuts or thick slices
  • 500g Packet pre-made shortcrust pastry
  • 2.5ml (½ tsp) Tomato purée, per pizza tart
  • 175g (6oz) Cherry tomatoes
  • 1 Courgette, thinly sliced
  • 15mlsp (1tbsp) Olive oil
  • 100g (4oz) Mozzarella cheese, roughly torn
Method:
Pre-heat the oven.

Roll out the pastry and cut into 9cm (3½) circles. Place these on to baking sheets lined with non-stick paper. Top each round with 2.5ml (½tsp) tomato purée and spread over the pastry.

In a bowl toss the ham, tomatoes and courgette slices together in the olive oil.

Take generous handfuls of the ingredients and place them on to the pastry rounds and then top with a small piece of mozzarella cheese.

Bake the mini pizza tarts in the oven for 15-20 minutes until golden brown.


Serving Suggestions:
Serve with a green salad.
