Ham and Courgette Mini Pizza Tarts

Gas mark 6, 200°C, 400°F
150g (5oz) Cooked ham, chunky off cuts or thick slices
500g Packet pre-made shortcrust pastry
2.5ml (½ tsp) Tomato purée, per pizza tart
175g (6oz) Cherry tomatoes
1 Courgette, thinly sliced
15mlsp (1tbsp) Olive oil
100g (4oz) Mozzarella cheese, roughly torn
Pre-heat the oven.
Roll out the pastry and cut into 9cm (3½”) circles. Place these on to baking sheets lined with non-stick paper. Top each round with 2.5ml (½tsp) tomato purée and spread over the pastry.
In a bowl toss the ham, tomatoes and courgette slices together in the olive oil.
Take generous handfuls of the ingredients and place them on to the pastry rounds and then top with a small piece of mozzarella cheese.
Bake the mini pizza tarts in the oven for 15-20 minutes until golden brown.
Serve with a green salad.
This recipe is a great for parties, picnics or packed lunches.
