Casual Kebabs

Ingredients:
  • 225g (8oz) Lean lamb, rump or leg steaks or Pork tenderloin or loin steaks or Beef rump steaks
  • 1 Small mango, peeled and cut into large chunks
  • 4-5 Cherry tomatoes
  • Olive oil
  • Crunchy Peanut Mojo (to serve with the pork)
  • 3x15mlsp (3tbsp) crunchy peanut butter
  • 6x15mlsp (6tbsp) orange juice (add more for a runny consistency)
  • pinch chilli powder
  • 2 finely sliced spring onions
  • Green Pepper and Chilli Mojo (to serve with the lamb or beef and tomatoes)
  • 1 green pepper and 1 green chilli deseeded and very finely chopped
  • 2x15mlsp (2tbsp) fresh coriander chopped
  • 5mlsp (1tsp) olive oil
  • 2x5mlsp (2tsp) sweet chilli sauce
  • juice of half a ½ lime
Method:
Pre-heat the BBQ or grill.

Take the lamb, pork or beef steaks and cut into cubes. Thread three pieces of meat on to long wooden skewers (pre-soaked in water to prevent burning).

If you have time, marinate the lamb and beef cubes in a little olive oil and a pinch of chilli powder and the pork in a little olive oil and orange juice. Otherwise brush with a little olive oil and BBQ or grill for 8-10 minutes.

Make your chosen Mojo by combining the ingredeints and mixing well.
Thread the mango chunks or 4-5 cherry tomatoes on to separate skewers - these skewers won't need a lot of cooking, just a quick flash!

Serve with large crunchy salad and large spoonfuls of these tasty mojos;
