Lean pork leg, shoulder, loin or fillet
Gas mark 4-5, 180°C, 350°F
Between 3 and 4 people
450g (1lb) Lean pork cubes (leg, shoulder, loin or fillet)
2x15mlsp (2tbsp) White wine vinegar
2x15mlsp (2tbsp) Soy sauce
2.5mlsp (½ tsp) Ground ginger
2.5mlsp (½ tsp) Ground allspice
2 Garlic cloves, crushed
300ml (½ pt) Mango and apple fruit juice (or similar)
15mlsp (1tbsp) Sweet chilli sauce
1 Red chilli, seeded and finely chopped
1 Onion, finely chopped
Pre-heat the oven to Gas mark 4-5, 180°C, 350°F.
Place all the ingredients into a large ovenproof casserole. Place in the oven and cook for an hour. After 1 hour remove the lid and cook for a further 30 minutes to thicken the sauce slightly.
Serve with sweet potato mash and a Creole coleslaw (made from white cabbage, red onion and paw paw fruit or mango).
