Lamblicious Burger Sticks

450g (1lb) Lean lamb mince
25g (1oz) Mushrooms, thinly sliced
1 Tomato, chopped tomato
15mlsp (1tbsp) Tomato ketchup
2 Celery sticks
1 Red pepper (long pointy)
3x15mlsp (3tbsp) low fat cream cheese
4x15mlsp (4tbsp) sweetcorn
1 spring onion, finely chopped
Fiery tomato chilli
3x15mlsp (3tbsp) low fat cream cheese mixed with 1 tomato, finely chopped
½ red pepper, de-seeded and finely chopped
pinch of paprika
Mix together the lamb mince with 1 carrot, peeled and grated. Add the sliced mushrooms, chopped tomato and tomato ketchup.
Peel the remaining carrot and cut into long thick sticks. Cut the celery sticks in half lengthways. De-seed the pepper and cut into long thick strips.
Take a handful of the mixture and mould it around the centre of the vegetable sticks. Place the burger sticks on to a grill grid lined with foil.
Place under a pre-heated grill and cook until the mince is cooked through for approximately 10-12 minutes. Turn carefully part way through the cooking time.
Serve with extra crunchy dipping vegetables and a selection of dippy spreads : shop bought or simply make.
